Smoked Shrimp & Blue Cheese Grits



Smoked Shrimp over Bleu Cheese grits.
Fast easy and delicious.
1cp. White or Yellow Stone Ground Grits. (No instant here. you may have to go to a specialty or health food market to find them.)
1qt. Milk
1/2 Yellow onion, diced small
3TB. prosciutto or bacon diced small
2tea. salt
1/2tea. fresh ground black pepper
1cp. blue cheese grated
2dz. shrimp 21-25's(the amount of shrimp per pound) leave shell on
smoking chips
smoker or aluminum foil pan
aluminum foil if no smoker
small wire rack
on stove top place chips in alminum foil pan with rack and get smoking on burner or grill. just enough to smolder
place shrimp on rack and cover with aluminum foil let smoke for about 25min.
You may have to get hot again to get chips to smolder
you may have to finish them in the oven. just til pink.
Cool then peel
In a saute pan fry bacon, when crisp add onions
and saute until golden. Add milk and seasoning. Bring to a boil
then whisk in the grits in a slow steady stream. Use a wooden spoon and stir to get the sides. Reduce heat to a barest simmer and cover leaving a little whole to let steam escape.
Continue to cook for 25 minutes stirring every 5 minutes to prevent sticking.
When done stir in the bleu cheese. To serve, scoop onto 6 plates and top with 4 shrimp.
