Mmmm Tomatoes

Tomatoes! just when you thought you picked your last one. the next day there are 30 more pounds sitting on the vines ready to burst.
Here's a little recipe for all those little cherry tomatoes you have laying around.


2 Pints Cherry Tomatoes, Mainly small about olive size
1/2 & 1/2 Canola oil and extra virgin olive oil. just enough to cover the tomatoes.
1 sprig rosemary
1 bayleaf
2t. Kosher salt
Flat bottomed saute' pan or sauce pot
Method:
place all the ingredients in pan and place over a low heat, bring oil to a slow simmer and continue until tomatoes are soft about 20-30 min.
remove from heat and strain gently through a colander or china cap. Let the tomatoes cool a little then serve or try to make this tomato aioli...Reserve the oil the tomatoes were cooked in.
Place the tomatoes in a blender. With the blender running, add the oil in a slow thin steady stream until a nice thick tomato mayo is formed. add a little lemon juice and some S&P. Slather on some nice crusty garlic bread. MMmmm.
