Braised Leeks

4 whole Leeks

4oz butter

Salt and pepper

Saute pan - all metal

Cut leeks in half and rinse thoroghly making sure to remove all the grit. Season leeks with salt and pepper then sauté in the metal pan with the butter for 2 minutes.

Place in 375F oven for 12 min. (still in same pan)

Remove and chill
