Spanish potatoes


Serves 4

2T. Olive oil

1# Small New

Potatoes or Red Bliss potatoes, 1/2 'dice

1 Yellow or White onion, peeled and ½" dice

1 Red Bell Pepper, seeded and sliced into strips

1t Chili Powder

1t Mustard, grainy or Dijon

1C. Tomatoes, diced

1 1/2C. Chicken Stock

To taste Salt and freshly ground bBack Pepper

3T Italian Parsley, roughly chopped

Heat some oil in pan. Add potatoes and onions stirring frequently until the onions are translucent approx. 4-5min.

Add the red peppers, chili powder and mustard. Cook for 3-4min.

Add the tomatoes and stock. Bring to a boil. Reduce heat and simmer for about 25 min, or until the potatoes are tender. Season with salt and pepper, to taste. Transfer to a platter and

garnish with parsley. Enjoy
