Chef Mike D says...

Hey all, Our friend Bubba, whose house we stayed in Placencia, smokes fish and chicken for the local restaurants. It's a great way to amp up the flavor of your food. Smoking can be done right on your stove top.
You will need:
An Old Pan
a perforated pan or grill that fits inside the old pan
Tin foil
Small smoking chips
food to be smoked
Cover the bottom of the pan with the small smoking chips. Heat on the stove top until it starts to smoke. Place the food on the grill and put on top of the chips. Cover with tinfoil. Remove from heat. Let sit 20 minutes.This smoking process just imparts flavor but does not cook the food. You will still have to cook the food items but the taste will be great.
Try Different kinds of fish or chicken. I've also smoked vegetables for vegetarian soups that were fantastic. Try it and let us know what you think.
